Chili Dog Casserole

When I made this for the first time my husband said "if I'm ever on death row, I want this to be my last meal!"  I've made it once a week since. It's easy and delicious!

You will need:
2-3 15 oz cans chili with beans
1 16 oz pkg hot dogs (I use bun length)
1 pkg flour tortillas (fajita size)
1 8 oz plug shredded cheddar

Preheat oven to 425

Spread can of chili in bottom of baking dish.

Roll hot dogs in tortillas until all used. Place in pan seam side down on top of chili.

Top with remaining chili and sprinkle with cheese.

Cover with foil and bake 30 minutes.

Buffalo Mozzarella Porkchops

You will need:
2 tbsp olive oil
2 tbsp butter
2-3 tbsp wing sauce
Thinly sliced mozzarella
Thin center cut boneless pork chops
Salt/pepper

Add olive oil, butter, and 1 tbsp wing sauce to a large skillet.
Season each side of the pork chop with salt and pepper.

Once the pan is heated to med-high heat, add pork chops. Cook for 2-3 minutes on each side or until done.

Once cooked thoroughly, place on a cookie sheet, apply liberal amount of wing sauce, then top with slice of mozzarella.

Place under broiler for 5-7 minutes or until cheese is bubbly and melted.

This is great if you are a fan of pork. Next time, I'll use chicken!
